Roast Vegetable Salad

Ingredients

  • 1 pc. eggplant, sliced
  • 3 pcs. plum tomatoes, sliced
  • 1 pc. zucchini, sliced
  • ¼ cup olive oil
  • 1 tsp. basil, chopped
  • 1 tsp. thyme, chopped
  • 1 tsp. oregano, chopped
  • 1 cup Ranch Dressing
  • 1 pack arugula
  • 1 bunch curly lettuce
  • 100 g. feta cheese, crumbled

Method

  1. Combine tomatoes, eggplant and zucchini with olive oil and all your herbs and aromatics. (thyme, basil and oregano) in a bowl. Chill for at least 30 minutes, while you preheat your oven to 380 F.
  2. Put your herbed veggie mixture in a baking tray and bake for 8-10 minutes or until they are cooked. Remove and allow to chill for another 10 minutes.
  3. In a serving bowl, combine your baked veggies with ranch dressing. USe the feta cheese as your topping.
