Ingredients
- 1 pc. eggplant, sliced
- 3 pcs. plum tomatoes, sliced
- 1 pc. zucchini, sliced
- ¼ cup olive oil
- 1 tsp. basil, chopped
- 1 tsp. thyme, chopped
- 1 tsp. oregano, chopped
- 1 cup Ranch Dressing
- 1 pack arugula
- 1 bunch curly lettuce
- 100 g. feta cheese, crumbled
Method
- Combine tomatoes, eggplant and zucchini with olive oil and all your herbs and aromatics. (thyme, basil and oregano) in a bowl. Chill for at least 30 minutes, while you preheat your oven to 380 F.
- Put your herbed veggie mixture in a baking tray and bake for 8-10 minutes or until they are cooked. Remove and allow to chill for another 10 minutes.
- In a serving bowl, combine your baked veggies with ranch dressing. USe the feta cheese as your topping.
