Ingredients
- 1 kilo Pork Kasim, cut into chunks
- 2 tbsp Brown Sugar
- 3 tbsp Cooking Oil
- 2 tbsp black beans, strained
- 4 cloves Garlic, crushed
- Soy Sauce
- 4 pc bay leaf
- ½ tsp Black Peppercorn
- 3 pc Star Anise
- ½ cup Water
- ¼ cup Cane Vinegar
- 1 can Pineapple Chunks (separate pineapple
- and syrup)
- 1 can Tomato Sauce
Method
- In a large stock pot, combine pork and sugar and cook until the sugar is caramelized and the pork is fully coated with the sugar..
- Add minced garlic and black beans cook until the meat is cooked and nicely browned.
- Mix in soy sauce, vinegar, bay leaves, peppercorn, tomato sauce and anise. Cover and allow to simmer for a few minutes.
- Pour the liquids (pineapple syrup & water) cover and leave to simmer for about an hour or when the meat is tenderized.
- Combine in the dried banana blossoms , allowing to simmer for only a few minutes.
- The last ingredient to go in the pot is the pineapple chunks, only cooking for about 2 more minutes.
