Pork Humba

Ingredients

  • 1 kilo Pork Kasim, cut into chunks
  • 2 tbsp Brown Sugar
  • 3 tbsp Cooking Oil
  • 2 tbsp black beans, strained
  • 4 cloves Garlic, crushed
  • Soy Sauce
  • 4 pc bay leaf
  • ½ tsp Black Peppercorn
  • 3 pc Star Anise
  • ½ cup Water
  • ¼ cup Cane Vinegar
  • 1 can Pineapple Chunks (separate pineapple
  • and syrup)
  • 1 can Tomato Sauce

Method

  1. In a large stock pot, combine pork and sugar and cook until the sugar is caramelized and the pork is fully coated with the sugar..
  2. Add minced garlic and black beans cook until the meat is cooked and nicely browned.
  3. Mix in soy sauce, vinegar, bay leaves, peppercorn, tomato sauce and anise. Cover and allow to simmer for a few minutes.
  4. Pour the liquids (pineapple syrup & water) cover and leave to simmer for about an hour or when the meat is tenderized.
  5. Combine in the dried banana blossoms , allowing to simmer for only a few minutes.
  6. The last ingredient to go in the pot is the pineapple chunks, only cooking for about 2 more minutes.
