Ingredients
- 1 cup shredded spring onions
- ¼ cup sesame oil
- ¼ cup vegetable oil
- 1 tbsp sugar
- 2 cups chicken stock or water
- ¼ cup minced garlic
- 1 cup sliced onion
- 1/3 cup julienned ginger
- 2 tbsp calamansi juice
- 3 tbsp liquid seasoning (or soy sauce)
- 2 kg Creamy Dory fillet
- 3/4 cup Oyster Sauce
Method
- Combine liquid seasoning or soy sauce, calamansi juice and oyster sauce. Add in the dory fillet slices into the bowl, making sure it’s evenly coated. This will flavor the fish.
- In a large plate, spread ginger, onions, and garlic. lay the dory pieces above and place the plate inside the steamer and steam for 20-25 minutes. Remove and set aside. Keep the juices accumulated from the fish.
- Combine ½ cup oyster sauce, water, sugar and juices in a small pan and bring to a simmer.
- Combine your sesame and vegetable oil in a separate pan and heat to almost a boil.
- Take your steamed dory and pour your warm oyster mixture in, then adding the hot oil mixture. Top it off with your spring onions
