Oriental Steamed Fish

Ingredients

  • 1 cup shredded spring onions
  • ¼ cup sesame oil
  • ¼ cup vegetable oil
  • 1 tbsp sugar
  • 2 cups chicken stock or water
  • ¼ cup minced garlic
  • 1 cup sliced onion
  • 1/3 cup julienned ginger
  • 2 tbsp calamansi juice
  • 3 tbsp liquid seasoning (or soy sauce)
  • 2 kg Creamy Dory fillet
  • 3/4 cup Oyster Sauce

Method

  1. Combine liquid seasoning or soy sauce, calamansi juice and oyster sauce. Add in the dory fillet slices into the bowl, making sure it’s evenly coated. This will flavor the fish.
  2. In a large plate, spread ginger, onions, and garlic.  lay the dory pieces above and place the plate inside the steamer and steam for 20-25 minutes. Remove and set aside. Keep the juices accumulated from the fish.
  3. Combine ½ cup oyster sauce, water, sugar and juices in a small pan and bring to a simmer. 
  4. Combine your sesame and vegetable oil in a separate pan and heat to almost a boil.
  5. Take your steamed dory and pour your warm oyster mixture in, then adding the hot oil mixture. Top it off with your spring onions
