Ingredients
- ½ kg. potatoes, peeled
- 2 cups Lady’s Choice Real Mayonnaise
- 1 tbsp mustard
- 1 tsp honey
- ¼ tsp paprika
- 2 pcs. ham, chopped
Method
- Boil enough water in a medium stock pot with salt, add in your potatoes. When the potatoes are tender, drain the water, allow them to cool for a little while then cut into medium bite-sized cubes. Be careful not to over cook the potatoes. Allow to cool even further – set aside.
- In a medium bowl, whisk your mustard and mayo, adding in slowly the rest of the ingredients, adding the ham last and starting with the dry ingredients. You may add salt and pepper for flavor. Taste the mixture.
- In your serving bowl, Add the cooled down potatoes, mixing in the dressing using a wooden ladle. Make sure the mayo mixture is evenly coating the potatoes. Chill before serving.
- To Garnish I like to use finely chopped spring onions for color.
