  • ½ cup Oyster Sauce
  • 3 cups vegetable oil
  • 3 tbsp sliced spring onions
  • ¼ cup sugar
  • 1 tbsp sesame oil
  • 1 tsp cinnamon powder
  • 2 kg pork baby back ribs, cut into 2-pc ribs

Method

  1. Combine water, coffee, oyster sauce, sesame oil sugar, and cinnamon powder in a bowl. Mix well and divide into two portions.
  2. Soak the ribs with one portion of the glaze and gently place in the baking pan. Cover with aluminum foil and bake for 2-3 hours at 325 °F or until very tender.
  3. Remove ribs from the pan and set aside to cool. In a bowl, whisk egg whites. Toss in cornstarch and mix well. Toss the ribs into the mixture.
  4. Heat the oil in the pan and cook ribs until golden brown. Let the excess oil on the ribs drip on a cooling rack or paper towels.
  5. Remove excess fat from the pan drippings and combine with the remaining portion of the glaze in a pan. Simmer to reduce until thick.
  6. Using a brush, evenly coat the ribs with the glaze. Transfer into a serving plate. Garnish with spring onions and serve.
