Lumpia Shanghai

Ingredients

  • ½ kilo ground pork
  • ½ kilo ground beef
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 1/8 cup soy sauce
  • 2 ½ teaspoons ground black pepper
  • 1 ½ tablespoons garlic powder
  • ½ tablespoon salt
  • 1 ½ tablespoon brown sugar
  • 1 tablespoon spring onions, finely chopped
  • 1 (16 ounce) package spring roll wrappers
  • oil for frying

Method

  1. Mix all your ground meat, spring onions, onions, carrots and brown sugar in a large bowl. Use your clean bare hands and knead down the entire mixture to evenly distribute the ingredients. (food gloves optional)
  2. Slowly pour in the soy sauce sprinkling ground black pepper, add in garlic powder. Put in salt last until all ingredients are evenly distributed. Repeat kneading process
  3. Tip : To know if the taste is according to your liking just get a 1 teaspoon size meatball, then fry it. Once cooked, check the taste and adjust the saltiness of the meat mixture according to your preference.
  4. Lay flat a few wrappers on a tray, and spoon enough filling in the middle wrapper to make a medium line. The line should be at most as thick as your thumb or the wrapper might burn before the filling is cooked. If the filling is too thick, you might not fully cook the filling as the wrapper cooks.
  5. Roll your lumpia the best possible way you can imagine that is easy for you. All you need to remember is that the meat must be in tact, not too close to the edge so it is easy to fry and won’t crumble as you cook it.
  6. It’s easier to seal your lumpia if the edges to close is moist. Have a small bowl of water nearby as you are wrapping your lumpia.
  7. The key to cooking lumpia is to make sure the oil you use is hot enough. Make sure your oil is super hot before starting. Make sure you are not frying too much at a time so it doesn’t stick to each other and it cooks faster.
  8. I like to deep fry my lumpia coz it’s easier to determine if it’s cooked. When the lumpia floats it is pretty much done.
  9. Depending on how small you want your shanghai, cut with a pair of kitchen shears.
  10. Serve with your preferred sauce – I like sweet chili sauce but my kids like ketchup.
