Ingredients

Filling

  • 1 Cabbage, shredded
  • 2 C baguio beans or string beans, chopped
  • 2 cups sweet potato, cubed
  • 1 cup shrimp, shelled and deveined
  • 1 ½ cup carrots, julienned
  • ½ cup water
  • 8 pcs Lettuce leaves
  • 1/8 kilo ground pork
  • 2 squares tokwa (tofu), sliced in strips
  • 1 medium sized onions, chopped
  • ½ cup cilantro, chopped
  • 3 tbsp garlic, minced
  • 1 pork cube
  • 2 tbsp fish sauce (patis)
  • ½ cup peanuts, finely crushed (for garnish)

Wrapper

  • 1 cup all-purpose flour
  • 2 pieces raw eggs
  • dash of salt
  • 1 ½ cups milk
  • oil to grease frying pan

Sauce

  • 1 tbsp soy sauce
  • ½ cup brown sugar
  • 2 cups water
  • ½ pork cube
  • 1 tbsp garlic, minced
  • 2 tbsp cornstarch (diluted in 4 tbsp water)

Method

Cook the Filling:

  1. Heat oil in a frying pan and sauté garlic and onions. Toss in the pork and fry until slightly cooked
  2. Dilute your pork cube in half a cup of water and mix it in the pan then simmer until pork is cooked. Add the potatoes and shrimps into the mix allow to cook until the potatoes are done. You can use a toothpick to test doneness. 
  3. Add the tofu and cook for a few more minutes then add the your beans, carrots and cilantro leaves with the rest of the ingredients.
  4. Toss in the cabbage and cook for 3-5 minutes. Pour in some fish sauce to taste and mix evenly.
  5. Set aside

How to make the Wrapper:

  1. Using a medium bowl, whisk eggs and slowly add milk while mixing.
  2. Then you can add in the salt and flour, mixing thoroughly.
  3. Mix in the oil.
  4. Use a non stick pan and add a few drops of oil, to lightly grease the bottom of the pan on medium fire. Make sure the oil is heated before starting to cook your batter.
  5. Using a half cup measuring cup, scoop the batter and pour into your pan. Making sure the batter is distributed evenly in a pancake-like shape.
  6. Cook until the top part of the mixture is dry. It takes around a minute and a half to cook one wrapper.
  7. Remove the cooked sheet, using a spatula. Set aside.

The Sauce that makes the difference:

  1. In a small saucepan, boil the water
  2. Mix in the pork cubes and sugar. 
  3. Add Soy Sauce & Salt to taste, mixing thoroughly .
  4. Mix water and cornstarch, making sure the mixture is smooth and cornstarch has been diluted all the way through and pour in the saucepan.
  5. Allow to simmer and boil to get the sauce to thicken. Set aside.

Putting it all together:

  1. Lay the wrapper flat in a tray or flat plate then put a leaf of lettuce in the center towards the top of your wrapper.
  2. Scoop some of the filling and position towards the middle of the wrapper on top of the lettuce
  3. Envelope the filling and lettuce, folding the bottom part first and rolling the rest until filling is totally enclosed. Imagine rolling a cigar.
  4. Let’s Eat:
  5. The Sauce goes on top of your lumpia, sprinkle with garlic and peanuts.
