Filipino Paella

Ingredients

  • 2 Cups rice
  • 1 Cup shrimp
  • 3 pcs crabs, cleaned
  • ½ kilo clams
  • 2 Fish fillet
  • ½ kilo mussels
  • 1 Onion, sliced
  • ½ bulb garlic
  • ½ Red pepper
  • 1 Can green beans
  • 1 tsp saffron flower
  • 1 tsp atsuete seeds, (soaked in a cup of
  • water)
  • 1 tbsp tomato paste
  • ½ Cup canned tomato
  • ½ Cup stocks from shrimp heads
  • 2 Cups water
  • Canola Cooking oil
  • Salt and pepper to taste

Method

  1. Heat oil in a large frying pan over medium heat. sauté the garlic and onion.
  2. Stir in the atsuete water (do not include the seeds) and mix well. Add the canned tomatoes and allow to cook for about 3 minutes..
  3. Mix in your shrimp stock and tomato paste and bring to a boil.
  4. Add in the all your prepared seafood. Add salt and pepper to your preference.
  5. Cover and allow to simmer for about 8 more minutes or until seafood is completely cooked.
  6. When the seafood is completely cooked, remove them from the pan, leaving the sauce.
  7. Add water, rice and saffron to the sauce. Stir to evenly distribute the ingredients, cover and cook until rice is tender. Add more stock if needed.
  8. Add the bell peppers, and green peas and allow to simmer for about 4  minutes. 
  9. Add back your cooked seafood and mix evenly with all the ingredients.
  10. Scoop the cooked paella into a serving dish or platter and garnish with the olives and hard-boiled egg if desired.
