Filipino Lasagna

Ingredients

  • 1 cup grated Parmesan cheese
  • 1 ½ kilo Lasagna

Meat Sauce

  • ½ kilo Lean Ground Beef
  • 1 can diced tomatoes (28 oz)
  • 1 can tomato sauce (16 oz)
  • 1 can tomato paste (6 oz)
  • ½ cup chopped onions
  • 2 cloves garlic, chopped
  • ½ cup Water
  • 2 tablespoon Canola cooking oil
  • 2 tablespoon white sugar
  • 3 tablespoon fresh parsley, chopped
  • 3 tablespoon fresh Basil leaves, chopped
  • 1 teaspoon salt
  • ½ teaspoon ground pepper
  • spiced ham sliced into small cubes

White Sauce

  • ½ stick chopped Butter,
  • 1/3 cup All purpose Flour
  • 4 ½ cups fresh milk
  • 75g finely grated Parmesan cheese,
  • ¼ teaspoon salt

Method

Soak the lasagna in water for 20 minutes.

The Meat Sauce:

  1. Heat oil in a frying pan and sauté onions and garlic.
  2. Add the ground beef and cook for about 10 minutes or until beef is nice and brown. Mix in the, diced tomato, tomato sauce and tomato paste then stir well with the meat. 
  3. Put in your parsley, basil leaves, sugar, and salt according to taste preference. Mix and leave it to simmer for about an hour.
  4. Put some black pepper (ground), mix, taste and then put to the side,

The White Sauce: (you can make while waiting for meat sauce to be ready)

  1. Slowly allow the butter to melt in a saucepan over low to medium heat until it bubbles.
  2. Add the flour and constantly stir for about 2 minutes until bubbles start to form. Turn off heat.
  3. Add the milk little by little while continuously mixing until it becomes creamy.
  4. Turn on the heat again then cook the mixture. Use a wooden spoon and consistently stir for 12 minutes or until the white sauce is thick and coats the back side of your wooden spoon.
  5. Remove from heat.
  6. Sprinkle parmesan cheese, nutmeg and salt to the sauce and mix. Set aside.

To assemble and cook lasagna:

  1. Evenly cover the bottom of the baking dish with a thin layer of  the white sauce.
  2. Arrange the lasagne noodles side by side, making sure the bottom of the baking dished is fully covered.
  3. Add in a layer of meat sauce over the pasta sheets. Add spiced ham. Then, pour in a layer of the white sauce.
  4. Arrange the second layer of pasta, meat sauce and white sauce until you reach a total of four layers.
  5. Top with remaining white sauce and parmesan cheese.
  6. Take a large baking sheet and cover it with foil.
  7. Place lasagna dish on top, cover it with aluminum foil or if the dish has its own lid and put on the middle rack of the oven and bake at 350°F to 375°F for about 30 minutes or until top is bubbling.
  8. Remove cover and continue to bake for about 15 minutes or until cheese is golden brown.
  9. Let it cool for 5 minutes before serving.
