Ingredients
- 2 tbsp Instant Coffee Granules
- 1 cup hot water
- ½ cup Oyster Sauce
- 3 cups vegetable oil
- 3 tbsp sliced spring onions
- ¼ cup sugar

- 1 tsp cinnamon powder
- 2 kg pork baby back ribs, cut into 2-pc ribs

Method
- Combine water, coffee, oyster sauce, sesame oil sugar, and cinnamon powder in a bowl. Mix well and divide into two portions.
- Soak the ribs with one portion of the glaze and gently place in the baking pan. Cover with aluminum foil and bake for 2-3 hours at 325 °F or until very tender.
- Remove ribs from the pan and set aside to cool. In a bowl, whisk egg whites. Toss in cornstarch and mix well. Toss the ribs into the mixture.
- Heat the oil in the pan and cook ribs until golden brown. Let the excess oil on the ribs drip on a cooling rack or paper towels.
- Remove excess fat from the pan drippings and combine with the remaining portion of the glaze in a pan. Simmer to reduce until thick.
- Using a brush, evenly coat the ribs with the glaze. Transfer into a serving plate. Garnish with spring onions and serve.
